My pancake craving hasn’t gone away. In fact, lately all I can think about it eating pancakes. Okay, that’s a bit of an exaggeration but you get the point. Sometimes I get food cravings that start to border on obsession, and that’s what’s been happening. So finally, I made myself a stack of pancakes. I figured since I’ve still got Vegan Brunch checked out, I may as well try these. The recipe isn’t that much different than one for regular pancakes except the milk is replaced with soy, rice or almond milk (almond milk in my case). I like that there’s a bit of syrup and cinnamon in this recipe, and I’d also like to try swapping out at least some of the white flour for white wheat flour. Anyway, these really hit the spot. They’re a nice pancake and I gobbled them up.
I’ve got this book for another couple of weeks, but I think what appeals to me about it is that I’m not a big fan of most traditional breakfast foods. I like eggs, but not especially in the morning. A lot of the recipes in this book tend more towards what could be thought of as dinner foods (red flannel hash, with beets!, tofu scramble).
