It’s ironic that I accidentally came very close to my ideal ginger cookie with these vegan cookies. I’ve been searching for a recipe that will give me a thick, chewy, spicy ginger cookie. These are plump and chewy and have the perfect balance of spice. Nice and sweet and I love the crunch of the turbinado sugar on top.
