Love this cake. First, it’s been cold and rainy here and what could be a better mood lifter than a bright, sunny lemon cake? Plus it was a breeze to make. Lots of steps, but nothing tricky. The cake is a sturdy but tender white cake with a hint of lemon. Sandwiched between the layers is a silky lemon curd. And the buttercream is dense but not too sweet, with some lemon curd mixed in. And a LOT of butter. Larry loves this cake. I skipped the decorating suggestion (lemon drop candies) because I have a major aversion to those things. I can’t wait to make cupcakes out of this recipe.
