Still digging our way out of the piles of winter squash and root vegetables. This creamy soup has coconut milk in it, and is topped off with a bit of coconut cream. The base is carrots, parsnips and butternut squash, with some pear thrown in to add a bit of sweetness. Pretty good, especially in this rainy weather.
