These cookies have just a hint of pepper and I’m always a fan of salty sweets, especially when paired with chocolate. I wasn’t a fan of the dough, however. My first tray of cookies turned out best, maintaining their shape and thickness. The rest had warmed up so they spread a bit more, but it was necessary in order to work with with dough. It was hard and kind of crumbly and was really difficult to roll out. Once it warmed up a bit was fine, and the cookies are turned out to be pretty tasty. Larry says he likes this filling better than the one I made for the Oreos.

I had troubles with my dough, too, but I just thought it was because I was too lazy to roll it out. Instead, I used a bench scraper to slice the dough into even pieces and then I shaped them by hand. They definitely turned out looking more homemade! They were good, though.
Your cookies look just like Oreos! I had crumbly dough, too. I just worked with the middle, left the cracking edges alone and didn’t re-roll the dough too much. The end result was worth the effort!
The dough WAS difficult – mine was hard as a rock, but warmed up. I liked the pepper/salt combo – some thought the pepper was overpowering. A fun cooky to make though! Glad you made them!
I only let my dough rest about an hour and found it was pretty easy to work with. Your cookies look great!

Whew, I thought it was just me with the dough. It was fine once it warmed up, and I do like the salt and pepper combo.
This filling (despite the shortening) is going to become my homemade Oreo filling (that one has shortening too, but it wouldn’t be the same without it).
