Working my way through Baked, these muffins aren’t something I was drawn to. In fact, I would have skipped right over them because I’m not a fan of coffee-flavored things and banana baked goods tend to be heavy and dense. But there I was, with several blackening bananas, so I figured what the heck. And I’m glad I did. These muffins are absolutely delicious. Not overly coffee flavored, not dense, and I love the bits of chocolate. The bulk of these went with Larry to a board of directors meeting for the Sunnyvale Heritage Museum, where they were gobbled up with abandon. The recipe can be found here.
