This pie is a perfect vehicle for my abundant supply of Meyer lemons. The recipe is for key lime pie, but it works great with Meyer lemon juice instead of lime. It’s creamy and not too tart and is made with a whisk and a bowl – honestly, my favorite kind of recipe. I used an off-brand graham cracker for the crust, and I decided I’ll never stray from Honey Maid again. It makes a difference.
