I would have been happy with just plain pork chops, but I had loaded up on blueberries and was curious about this recipes.
I love blueberries. A lot. But I wasn’t sure about using them in a savory dish – paired with pork, of all things.
The relish is a little spicy and very flavorful, with shallot, chile pepper, and ginger. Lime juice balances out the sweetness of the fruit. The result is interesting – good, in fact.
I think the relish would also pair well with chicken or a mild white fish.
