I wasn’t sure I’d be able to join in for this week’s Baked Sunday Mornings, given the fight I’ve had with The Cooties (I’m winning… barely), preparing for a long week in Vegas starting tomorrow, and then my site being down for the past SIX days (A Small Orange, I’m talking about you).
But I’ve never missed a bake, and luckily I rallied just long enough to make these super simple little meringues last night. I had egg whites in the freezer that I had defrosted just in case, so I even got to skip separating eggs.
These have a bit of cocoa powder in them, and texture comes from pistachios and mini chocolate chips. But honestly, any flavorings that strike your fancy would work. They are definitely not a pretty cookie, but they’re not bad.

Boo for being sick and technology problems! I hope both of those things get sorted out ASAP, and I’m glad you managed to bake– good thing it wasn’t a layer cake week. ;-)
