I love roast chicken. It’s the ultimate comfort food. Unfortunately, it’s not Larry’s favorite. However, since I made so many foods that I don’t like, I told him we get to have roast chicken every once in a while. Jay was here for dinner tonight.
– This chicken is a lot of work, and because Larry’s just lukewarm about it, I don’t think I’ll make it again. It’s good, though. I made two chickens – Empire Kosher brand from Trader Joe’s.
– I absolutely love delicata squash. I never take seconds of vegetables, but I love this technique. I bought another one at the store today. They taste like french fries when I make them like this.

- Delicata Squash Rings (Vegetarian Cooking for Everyone, Deborah Madison, p. 440)
- Mashed Yukon Gold Potatoes
- Baby Spinach Salad with heirloom tomatoes, balsamic vinegar, and olive oil
Wine: David Bruce 2000 Brosseau Vineyard Pinot Noir (Chalone, California). Tastes like cherries. Excellent Pinot.
The roast chicken was okay (actually not much of a garlic flavor). Sheri should make it again (if she likes it a lot), especially since she’s always making things that she doesn’t like (that I like :). I mainly don’t like roast chickens because they usually cook unevenly.
The Delicata Squash Rings are GREAT!
Oh… and the David Bruce Brosseau is a winner.
These chickens were especially difficult to cook evenly; they are smaller than roasters and it’s hard to get a good temperature reading.
I think the answer is to cook butterflied whole chicken instead.
You guys crack me up. I’d put a lot of money on the bet that you were in the same room when you posted these comments.

Interesting web site. I was simply out strolling looking for delicata squash recipes (since I have a box full of ’em in the garage). Ran across your web site (flog – food log?) and stopped to read. Interesting.
As for roast chicken – a rotisserie (George Forman Jr) is the only way to go. I do at least one chicken a week these days it’s soooooooooo easy.
