I needed to do something with the leftover salmon from Sunday night. I didn’t exactly make this recipe, just the salmon burger part. I used pesto from Trader Joe’s, and the only other ingredient in the burgers was salt and pepper. We had the burgers on toasted whole-grain bread with mayo and microgreens. Very good, but they’d be better grilled since the aroma really stuck around the house.

That really does sound like a good way to use leftover salmon. Not that I ever have any leftover salmon, but maybe it’s a good excuse for me to cook extra.
It was a result of me buying a mondo-pack of salmon (two large fillets) at Costco. Bleah, farmed salmon… I get spoiled by wild salmon every summer. It’s just 1.5 lb of salmon, 2 T of pesto, salt and pepper and chopped up in the food processor.
