Jay was here for dinner tonight. Halibut season is upon us, so Larry and I picked some up at Costco this morning. At 6pm, I really had no menu plan and started digging in the pantry and refrigerator. The halibut was excellent, the orzo was yummy, and the beets were really good also. Amazing how a simple, last-minute dinner can turn out so well. Larry and Jay had some of the leftover roulade after dinner. Larry said it’s definitely better the next day. Jay seemed to really like it.

Wine: Eric Ross 2001 Pinot Noir (Russian River Valley, California). A nice everyday Pinot we got through Locals Tasting Room.
I love halibut! Did you like the Creamy Guacamole Sauce? If so, I will make that.
I did like the sauce. I’ve made it a few times before, but not for a long time.
Mmmmm I love roasted beets. I’ve never seen the baby ones around here though. I’m lucky if I can find golden beets — and even then they are about 4x the price of red. What are Chiogga beets? Any of those showing in the picture?
I can get beets (normal and baby) pretty regularly at the farmer’s market and through my regular organic delivery. Lucky me! I love beets also.
Chiogga beets are pretty – pinkish outside, with reddish-pink and white stripes inside. They’re the ones in the photo that look yellow with pink on the ends.
