Another good dish from How to Eat Supper. It wasn’t exactly super quick to put together because I tend to spend a lot of time trimming boneless, skinless chicken thighs.

I’ve already returned the book to the library, but that was one of the recipes I had considered making.
Larry was lukewarm on it at first, but then had it several times over the week as leftovers and raved about it and insisted that I make it again!
My book is on its way. I’m very weak when it comes to cookbooks. I like the sound of the Curry with Gentle Spices. It looks good too.

This one is nice, and I like that a lot of the recipes are already published on the Splendid Table web site, to try before you buy!
