I’m a big fan of the cookbook Artisan Bread in Five Minutes a day, and when Zoe posted about using the dough to make English muffins, I was intrigued. Then Amy made them, and I knew I would have to make them too. I got the rings from Amazon on Friday and made up the dough, but didn’t actually make the muffins until today. It was ridiculously easy. A quick 15 minutes to prep the rings and get the dough into them, a half hour rise, and then 20 minutes in the oven. I ate them with the last of my lemon-ginger marmalade, and they were fabulous. In fact, I’m disappointed that I didn’t make them yesterday – they would have been great as buns for the bison burgers last night.

Aren’t they yummy???? Especially with the homemade marmalade??? I need to do this again. How many rings did you buy? I wish I had 4 more.

I bought eight rings, but I only made four. The beauty of this method is I can make one… or eight.
I bought 4 more rings, so now 8 total and made them again. They are sooo good!
