These delicious no-cook wraps are a great way to beat the summer heat. They’re very simple, just a mash of avocado, white bean and cheese spread on a whole-wheat wrap, topped with a simple slaw. We loved the avocado mash and found ourselves using leftovers on other sandwiches. The barley salad does require cooking (the barley) but it’s still a very refreshing dish.
