These cupcakes were very popular. I brought a bunch to work and they went really fast. Both the cupcakes and the frosting have reduced coconut milk and vanilla bean in them. I skipped the part of the recipe that said to top them with toasted coconut flakes. The recipe is pretty easy, but the coconut milk reduction took quite a bit more time than the recipe says it will.
