After a month-long break, we’re back to Sunday dinners with Jay. Larry wanted something with corn tonight, so I thought this risotto would be perfect for a simple dinner. I have a rice allergy, so I used farro instead of rice, and it worked great in the dish. I used mild chicken Italian sausage from Whole Foods, since Jay doesn’t do spicy. Larry really liked the dish but I thought it would have been better without the sausage.
Larry and I had the buttermilk pie at Liberty Bar last year when we were in San Antonio running the Rock & Roll Half Marathon. This recipe is from Liberty bar, but I don’t know, I still think it was better there. Larry says it’s better the next day.
