This is the second recipe I’ve made from Baked. These cupcakes have coconut in the cake, and they’re filled with a delicious coconut pastry cream and topped with a coconut frosting that’s a little odd (it has flour in it) but really light and flavorful. I took these to work and everyone really liked them – in fact, several people said they’re the best thing I’ve made so far (most of my baked goods end up at work!).
