Our CSA at Full Circle Farm has been loading us up with eggplant – which I don’t particularly like. I thought this stew would be a decent way to use it up, but I think I’d like this stew if it had time to cook longer. I want eggplant to be cooked a long time so it’s almost falling apart. Larry wasn’t crazy about this either.
On the other hand, the naan was delicious. It’s another reason to have dough from Artisan Bread in Five Minutes a Day on-hand. My standard dough lately has been the European Peasant Bread, so that’s what I used for the Naan. Just formed it and cooked it in a little ghee in a pan.
