My awesome (and vegan) friend Lisa delivered a cute little vegan cupcake cookbook a couple of weeks ago, along with ingredients and everything! This was my first time making a vegan dessert. The cake part is really good. There wasn’t a recipe for coconut frosting, so it’s just regular frosting with some coconut flavor added. Next time I’ll toast the coconut for the top. The frosting is a little odd, not bad but definitely not as good as buttercream.
