I was looking for an excuse to use some of the Rancho Gordo hominy I had been hoarding in the pantry. Posole seemed like the perfect way to use it. I love posole, Larry not so much – but he liked this version, which is made up of lots of hominy, pork shoulder, and chipotle to make a richly flavored and slightly spicy broth.
