I’ve been wanting to make this chicken ever since I got this cookbook but just never got around to it. So many recipes, so little time. It turns out it’s really delicious. I picked up some Lard Almighty from TLC Ranch at the farmer’s market this morning and decided it was time for me to make tortillas from scratch. Lard Almighty is their baking lard, pure white and without a porky flavor. The porky version would have worked well for the tortillas, but I wanted to have the option to bake with it also.
I used a metal tortilla press I got in Mexico during one of our vacations, and they couldn’t have been easier to make. I’ll definitely make them again.

Many years ago, my neighbor showed me how she makes tortillas. They were the BEST! I tried and tried but mine were never as good as hers.
Oooh! Use some of your lard for masa for tamales! You could use a Rick Bayless recipe.
