Soft-boiled eggs are easy to make – boil water, slide the eggs in, and pull them out in three minutes. We don’t eat eggs this way very often, but this was a special occasion. We got a half dozen eggs from our CSA share. The eggs are beautiful – slightly smaller than commercial eggs, very delicate and pale pastel colored. I figured eating them soft-boiled was the best way to appreciate them, and it was. They’re so good, with bright orange yolks and they’re very flavorful and rich.
