Larry did a fabulous thing tonight and cooked us dinner. I have a late Pilates class on Thursdays so I’m usually not home until 7:30. That means dinner is something like oooh, grapes… hmm, cottage cheese, yum. Mmm, crackers, I’ll have some of those. And I just cobble together a bunch of little snacks to form some sort of semblance of a meal.
Larry mentioned that he was craving spaghetti and meatballs, so I did a quick bit of research and sent him a couple of recipes. He picked Alton Brown’s baked meatballs, but used just beef and pork, no lamb. We cooked up whole wheat spaghetti, and then did something I’ve never done. At my suggestion, he picked up some (high-quality, organic) jarred sauce. I’ve always made sauce by hand. Never in the jar. But this is just a simple red sauce, Whole Foods brand, and it worked fine.
I liked the meatballs – I liked that they’re baked and that they have spinach in them. And they were pretty easy to make, according to Larry.

I would also omit the ground lamb in this recipe. I remember watching this episode on TV, and thought that ground lamb would be way too greasy. Spinach is a must, though…
