Larry and I fell in love with the ginger cookie we picked up from The Cheese Board on the way to Point Reyes this week. Thick and chewy, with lots of ginger and spice, but still sweet. As soon as we got home, I checked their cookbook, The Cheese Board: Collective Works, but there isn’t a recipe for the ginger cookie in there. This recipe from Bon Appetit comes close, but the cookies aren’t thick enough and need more ginger. They’re still pretty good, though.
