Now that the holidays are over, there’s finally room in the refrigerator for a bucket of dough. We rarely buy bread anymore, thanks to the authors of Artisan Bread in Five Minutes a Day. There are a ton of no-knead bread recipes out there, but the revolution with this and their recent follow-up book on healthy breads is all about the timing. I actually like kneading bread, but with traditional bread-making, the timing needs to be worked out so you’re home to shape, etc. I love being able to pull a hunk of dough out of the refrigerator, knowing I’ll have fresh, crusty bread in about an hour, with just a few minutes of preparation.

How is that particular one? I still love the European Peasant Bread so much that it is my default.
It’s good, but really wheat-y. I was thinking the same thing when I had a slice – I love the European Peasant Bread! Definitely my favorite and the one I make the most.
