I baked these vegan cupcakes for my friend Lisa, my favorite coconut-crazy vegan. As usual, the vegan cake part is really good, but the icing is a little weird to me because I’m a buttercream kind of gal. It’s just not the same without butter. However, the addition of coconut milk and shredded coconut to the frosting helps, and everyone who ate these loved them. These have a bit of sparkly edible glitter on top, but after a day or so it wasn’t noticeable.
