More cookies, continuing my quest for the perfect ginger cookie. These are also pretty close, if I make them a little bigger they might be perfect. They’re chewy and not overly spicy. Abby Dodge is one of my favorite recipe writers and I’ve made a lot of her food over the years, yet I’ve never baked from The Weekend Baker! This was the first recipe I’ve made out of the book, and they couldn’t be simpler. I’m looking forward to baking more out of it.
