I made the mistake of trying to double this recipe, and it just didn’t work very well. Doubling recipes for baked goods is difficult, and I think the leavening needed to be adjusted. Next time I want a double recipe of these, I’ll probably make two single recipes instead. And in addition to the baking issues (see how small and shrunken my cupcakes are?), it was a little warm so my buttercream got slightly melty.
I’m a fan of the chocolate buttercream. I like the butterscotch version a lot, but not particularly on these cupcakes.
