These simple arepas use Venzuelan corn flour, which is precooked and has a nice toasty flavor. I found some in a local Latin market. These are very simple to make, but I had lots of issues with making sure the centers were cooked. I think next time, thinner arepas, nonstick pan instead of cast iron (or maybe even a grill pan). The filling is nice too, kind of like a chicken salad. I like tempeh but I need to make smaller cubes.
