I don’t usually make biscotti, but my (newly vegan) Pilates instructor has been bemoaning the fact that she can’t find a vegan replacement for her cranberry-orange-white chocolate biscotti. Always up for a challenge, I checked my favorite vegan cookie cookbook, and there’s a recipe! Happy, because I’m definitely not experienced enough with vegan baking to make something up.
The only problem with the recipe is that it calls for Kosher white chocolate chips, which are also accidentally vegan. But I can’t find them anywhere, so I had to order them online. While I’m waiting, I decided to go ahead and try the cornmeal poppy seed biscotti. They turned out great! Crunchy but not super hard like normal biscotti. Very easy to make. I also whipped up a batch of lemon glitters for her since it’s her birthday. Love, love, love those cookies.
The pulled pork sandwiches are a favorite of Larry’s. Perfect timing since I just got a new slow cooker! I’m not as in love with pulled pork as he is, but this was good and really easy.
