Another try at making arepas. I love them, but I can’t seem to get them to be totally cooked through the middle. The meat-based filling actually called for chicken, but I had a bunch of slow-roasted pork shoulder on hand so I used that instead. The other filling is tempeh-based, and really good. Both of us actually liked the tempeh filling better.
