I had high hopes for these onion rings. They’re good, but not outstanding. The flavor is just right and the crunch topping is terrific. It’s just that the coating doesn’t stick to the onion. That may be because I used panko bread crumbs. When it became clear that it wasn’t quite working, I made a second batch of coating using panko crumbs that I ground up a bit more in the food processor. What might work better: soaking the rings in ice water first. Then maybe some cornstarch before the wet batter, then the crunchy coating.
We loved the lentil burgers. Spicy, smoky and very quick if you have canned, cooked lentils. We’ll definitely be making these again.

I can’t resist a good onion ring. Wow, if there’s a way to make a great baked version, I’m all ears. ;)
