My latest kitchen geekery acquisition is a little handheld smoker made by Polyscience called The Smoking Gun. A bit of a frivolous purchase, but I justified it because it was made using a gift card I got at work for participating in our cholesterol screening. I’ve been thinking about things to smoke, and the first thing I wanted to try was avocado.
The gadget is simple to use. Pack in some wood chips and light them up. The smoke comes out of a nozzle. I attached the included flexible tube to make it easier to get the smoke into the bowl of slice avocados, which I had covered with plastic wrap. I let it run for about 20 seconds, covered the bowl and let it sit for 5 minutes while I prepared the sandwiches. Larry had a traditional BLT, but my sandwich had tempeh bacon on it, which is even smokier than bacon. The avocado came out really nice, with a subtle hickory flavor. Not overwhelming and it was good on the sandwich, although the bacon flavor overpowered it more than I would have liked.
More ideas for smoked avocado include guacamole, particularly spread on some garlic bread. I can definitely see smoking cheese. It will smoke liquids as well. I’m looking forward to experimenting with it some more.
