I’m not crazy about potato salad. Larry likes it more than I do, and the only reason I made this was that the lower-fat aspect intrigued me. It’s a test recipe for a publication so I can’t publish the recipe, but the method was interesting – replace some of the mayo with a bit of mashed cooked potatoes mixed with some of the cooking water. The initial result was good, but the next day there was too much liquid in the bottom of the bowl.
