This is a test recipe, but tortas are a really easy and delicious twist on an ordinary sandwich. I buy bolillos or telera rolls at my local Latin market. Scoop out a bit of the bread and spread refried or mashed cooked beans on it. Sometimes I’ll add some cumin and onion to the beans. Our tortas are never without mashed or sliced avocado. Additional protein can be layered on there too – here, we put scrambled egg on Larry’s. I’ve made them with pork belly, but shredded pork roast or chicken would be nice, or sliced, season and seared tofu. Shredded cabbage and cilantro add flavor and crunch.
