I didn’t expect to like these scones. Carrot, ew. And I figured Larry wouldn’t like them either since he doesn’t like shredded coconut. I was wrong on both counts. They’re not too carrot-y, not too coconut-y. The coconut adds a really nice texture. The scones are hearty and not too sweet. The citrus glaze is a perfect topping. And they were super easy to make, practically trouble-free. I’ll be making these again.
