I’m thrilled with the Gale Gand Lavender Shortbread recipe but I can’t help but experiment when I see other recipes containing lavender. And since we love the lavender honey, I had to give these a try (I’ve got the book checked out from the library, and it looks really good). The one thing I don’t like about these is that they’re a chilled, log-based cookie that’s cut into slices. That never turns out well because it’s near impossible to get perfect round cookies. If I made these again I’d probably roll them out and use a cookie cutter.
The honey flavor isn’t really there, and while these are decent, they aren’t outstanding. A little on the dry side – they’re cut relatively thick and I don’t think that works well with shortbread that’s not cooked in a pan and cut into bars. The recipe is posted on Serious Eats.
