If you love After Eight candies (I do), you will love these grasshopper bars. They taste exactly alike. The bars have a fudgey brownie base, mint buttercream in the middle, and are topped with a chocolate ganache. The mint flavor comes from a combination of peppermint extract and creme de menthe. I didn’t know anything about creme de menthe, but it comes in both clear and green – use green for this recipe to get the pretty green color. People at work raved about these, and even Larry liked them. I was surprised since he doesn’t particularly like mint, but it’s the creaminess of the middle plus the right amount of chocolate to balance the mint that won him over.

I’ve yet to make these (just didn’t get the right time to unveil something so rich)! – but I hope they look as good as these! My CDM is green – so hopefully they will! Beautiful bars!

We loved these too. They were really yummy! I agree with you wholeheartedly about how great baking groups are…There is no way I would have tried baking the things I have if I was not involved in these groups. They are so much fun!
