We spend hours at our local coffee shop, sitting outside with Coco, reading and just hanging out. Sometimes Larry gets a snack from there to go with his drink, which is why I guess he asked for bran muffins – the ones at the coffee shop are pretty good. I don’t know if I’ve ever made bran muffins, but one request obviously needs to turn into an obsessive hunt for the best bran muffins ever.
I started with a simple recipe from Super Natural Every Day. Whole Foods didn’t have any old-fashioned bran cereal, so I followed Heidi’s advice and used an Ezekiel cereal instead (note: not particularly tasty). These don’t have any nuts or raisins, and Larry thought they were okay. Pretty darn good with the addition of Sarabeth’s Apple Preserves (which are excellent). But he didn’t like the texture that well since the cereal is kind of crunchy.
