This is the time of year when I desperately try to find things to make with Hachiya persimmon pulp. It’s not my favorite thing in the world, but we have a tree in our front yard that produces pounds and pounds of fruit every year. This year, we donated a large amount to our local farm to share with other farm share members, but I kept a few back to try out a few recipes.
This was the first recipe I’ve made out of Plum Gorgeous that I just didn’t like. I don’t know why – they weren’t awful, but the flavor was off. I think persimmon is a very particular flavor (and texture) and it needs to be paired carefully with other ingredients. In this case, chocolate chip cookies didn’t really work. And the title is misleading – these are nothing like chocolate chip cookies – they’re a bar cookie, and very lightly sweetened.
