I’m clearly going through a granola phase. It was that Eleven Madison Park granola that got me started again. Larry wants my honey-almond granola again, and that’ll be the next batch. I needed this double coconut granola first.
The coconut in the recipe is in two forms – solid coconut chips (large flakes) and coconut oil. Sweetness comes from a bit of maple syrup and brown sugar. I love the flavors in this coconut. I’m finding that I’m a big fan of raw pumpkin seeds in the mix, but what I love about granola is that it’s infinitely adjustable to your individual taste.
