Those Baked boys, they like their peanut butter. Especially with banana or chocolate. I don’t really like peanut butter, especially mixed with other things, but I’m making an exception for this pie.
The crust is made with vanilla wafers (I got lazy and used the Trader Joe’s version – turned out great). A bit of a change-up from a typical cookie press-in crust is the use of cold – not melted – butter. I think it works really well.
The filling is a vanilla custard. I’m on board with this. I got lazy (again) and didn’t use a vanilla bean – vanilla paste is a perfectly fine substitute.
Once the custard is chilled and set up in the crust, it’s topped with sliced bananas and then the peanut butter topping. The peanut butter is cut with cream cheese and whipped cream, and sweetened with powdered sugar. The result is more like the filling in a Reese’s Peanut Butter Cup.

Your pie looks so pretty, Sheri. Glad you liked this with the peanut butter. We really enjoyed this one and I will have to check out TJ’s vanilla wafers.
I liked the crust too….it was a change not having to melt the butter. I loved the way it turned out! Your pie turned out so perfect looking!! Beautiful!
Your pie is beautiful! I didn’t use the vanilla bean either and don’t think it hurt the pie at all!
Very pretty pie and pretty pie plate. I’m wondering if you liked this pie even though you are not a peanut butter person? I thought the peanut butter had a more subtle flavor, with all the accompanying mixture, so I was just wondering what you thought?
I liked it – it wasn’t too peanut-y because of the whipped cream and sugar and cream cheese. More like a Reese’s – which I like.
I really want to make a straight banana cream pie out of this one!
i think your thing with peanut butter is a similar thing i have for malt… both flavors are featured a lot in the books! your pie looks great!
I suspect the next book will be heavy on peanut butter and malt. Eeek!
Love the way your pie looks! I really enjoyed the peanut butter layer — it was so light and fluffy.
i am huge fan of vanilla paste! no muss no fuss!
Your pie really is gorgeous — I can’t believe what a beautiful smooth finish you got on your peanut butter topping, and how perfect and uniform your peanuts are! I also would love to try this as a straight banana cream pie!
