Pound cake is probably one of my favorite desserts. It’s cake, in its simplest form – unadorned, dense and not fussy.
This is a fairly standard pound cake, made in a loaf pan, except it’s flavored with honey and cinnamon. Irresistible. The flavors are subtle, but really nice.
I was so happy to see that this cake didn’t form that horrid sunken crater of uncooked down the middle. Emily gets it right! Her leavening ratios are perfect and the cake came out domed and beautiful. I’d probably cook it slightly less next time, maybe 45 minutes instead of 50.
Larry came up with a great way to eat the cake – sliced and slathered with homemade raspberry jam (amazing jam, compliments of Mrs. Wheelbarrow!). The recipe for the cake is posted here.
