I wouldn’t go as far to say this is anything like an authentic New Orleans po’ boy, but it’s a good sandwich.
The shrimp is seasoned with chili powder and paprika and is really good on its own. There isn’t much else to the sandwiches, just some tomato and onion and a simple slaw. I used green cabbage in my slaw because that’s what I had.
The cabbage is mixed with a bit of yogurt, mayo and sweet pickle relish to make the slaw. Larry really liked the slaw as-is (I’m guessing it was the pickle relish that took it over the top – it’s straight from Mrs. Wheelbarrow’s kitchen and it’s completely delicious).
