I blame Emma for the appearance of these sandwiches on our table. I don’t know if she knows about my fixation for panini, but when she pointed out the recipe, I knew I had to make it.
I hesitate to even call this a recipe, it’s so simple. The sandwich begins as a toasted cheese and tomato sandwich – nothing unusual here. But then, scallions are grilled (I cooked mine right on my panini grates) and are added to the mix. And chutney, a great foil to the smoky charred onions.
I love the idea of a pear chutney on the sandwich, but I couldn’t find one. Instead I used Sqirl Rare Snow Queen White Nectarine jam. And it was perfect.
