Pacific sand dabs: another new, first time fish for us with our latest Siren SeaSA delivery.
I’m somewhat knowledgeable when it comes to fish varieties, but I admit, I had no idea what sand dabs were. I imagined some sort of mollusk, like a sand dollar. I wondered, can you eat the insides of sand dollars?
I was totally wrong about the fish – it’s a Pacific flatfish, tender and a little sweet. It seems like the primary way it’s prepared is breaded and fried, so that’s what I did.
I used the recipe straight off the Siren blog. A dip in flour, then in an egg and milk mixture, followed by a coating of panko bread crumbs. It fries up really nicely and tastes delicious.
