This cake should have been better than it was, and I take full blame. I overbaked it. It’s the curse of the loaf cake, I’m always so worried about that underdone crack down the middle that sometimes I leave it in the oven slightly too long.
Luckily there’s plenty of salty caramel glaze to cover any sins. And the glaze is over the top delicious (I hope salty caramel never ever goes out of style). At any rate, it was a hit with the other bakers, so I think it definitely deserves another shake.

Yes, overbaking is always the conundrum with loaves– I had the same thing happen. I’m considering reducing the oven by a few degrees next time to see if that makes a difference?? Anyway, your loaf is gorgeous with that thick glaze.
