Wow, is this a coconut-y cake. Layers upon layers of coconut: coconut oil, cream of coconut, coconut extract, shredded coconut. If you like coconut, you’ll probably like this cake.
Larry doesn’t like coconut. Specifically, he doesn’t like shredded coconut… so this cake wasn’t his favorite. I took it to work, and people seemed to like it… but at the end of the day, there were still pieces left. This never happens. I blame the coconut.
The cake is a pretty straightforward sheet cake, topped with a cooked meringue buttercream (yum). The buttercream is piped on in rows of “eggs” – I guess that makes it more Easter-y. I happened not to make this for Easter, but it still a nice Springtime cake.

Your tidy little cake square is so perfect! Yeah, coconut seems to be a somewhat polarizing food. I had pieces left at work as well, but that could be because I brought another cake as well on the same day. Anyway, god-I-love-this-cake. :)
