I only got to eat part of this “cake” – which isn’t a cake at all, but a giant chocolate-spiked Rice Krispies treat topped with marshmallow. At any rate, I got to snack on the marshmallows, which, from what I can tell, is far and away the best part.
I’m allergic to rice, so no Rice Krispies for me. This one has a bit of a twist, since the marshmallows are made by hand (easy and delicious), and there’s some chocolate in the mix as well. Oh, and regular Rice Krispies are replaced with Cocoa Krispies.
There are a bunch of steps to make this, but none of them are difficult. It’s definitely not a last-minute dessert, since the marshmallow needs to set up. I brought it into work, and the first thing I noticed was that the Krispies part of the cake didn’t seem very snappy – I’m guessing it was the added chocolate that made it kind of soft.
Everyone I work with is too polite to say “ick” to anything, but it’s easy to tell what people like – and this is not it. It disappeared kind of slowly, and people were more interested in eating the leftover marshmallows than the cake. So far, it’s the least favorite of all of the Baked Occasions recipes.

These were a little strange-you didn’t miss out. I too liked these as two separate desserts-together not so much.
Oh! Allergic to rice-that’s annoying! Well, from what I had read, the marshmallow was the better part, so you didn’t miss much.
